Finally getting around to sharing my 10 minute food processor salsa recipe just in time for Memorial Weekend! This salsa is always a hit and makes for a great gift too! I have been making this for years, I originally found the recipe from the pioneer woman and adapted it to my own. I love that it involves minimal chopping and an easy cleanup!
By the way, having a great food processor is a game changer! If you are in the market for a new blender too, my Vitamin Blender & Food Processor was one the best gifts I ever received! It works so well!
Total Time: 10 minutes (plus optional refrigeration time)
Yields: 64oz of salsa
Ingredients:
1 (28-oz.) can whole tomatoes with juice
2 (15-oz.) cans diced tomatoes and green chilies
1 whole red onion, remove skin & chop into four quarters
2 peeled garlic cloves
1/2 lime, juiced
1/2 cup of cilantro, washed
1 tsp salt
1 tsp cumin
1 tsp chilli powder
1/2 tsp cayenne
For a spicy batch:
1-5 Jalapeños to taste, with seeds
1 tbsp of Cayenne pepper
(I typically do 4-6 jalapeños for a whole bath)
Instructions:
1. Add all ingredients to a food processor & pulse for 30-45 seconds or until combined.
2. Serve right away with tortilla chips or let sit in the fridge for a few hours to deepen flavors!
Notes:
•You can also take half of the salsa out and make the second half spicy!
•Makes 64oz (aka 4 of the 16 oz mason jars shown in the video)
•Saves in the fridge for about a week!
