One thing about me is I will never say no to a good soup, regardless of the temperature outside I can eat it at any time! This week I was craving chili, and my fiancé mentioned it would be good with steak. I have no idea why I never thought to do that before! My go-to recipe is to use ground beef, but the stewing meat really brought this meal to the next level! Plus, you use one pot for the whole soup so there is less cleanup!
P.S. – I used William’s Chicken Chili Seasoning – this a local KC company so if you are not able to get your hands on it then any chili packet should work!

Cook Time: 2 hours
Total Time: 2 hours and 25 minutes
Ingredients:
• 2 tablespoons of olive oil
•2 lbs of stewing meat, cut bite sized
• 1 yellow onion, chopped
• 2 garlic cloves, minced
• 1 can (14.5 oz) of beef broth
• 3/4 a bottle of V8 Juice (64oz)
• 2 cans (10 oz) diced tomatoes with green chilis
• 2 cans (15 oz) kidney beans, rinsed
• 1 tablespoon chili powder
• 1 tablespoon onion powder
• 1 packet of Williams Chili seasoning
• 1 teaspoon salt
• 1 teaspoon pepper
Optional Toppings:
• Sour Cream
• Shredded Cheese
• Onions
• Chives
• Fritos
• Crackers
• Jalapeños
• Corn Bread
Steps:
- Add the olive oil into a dutch oven. Brown all the meat over medium heat until lightly brown on both sides. Note: best to do half at a time.
- Remove meat and set aside. Sauté onions in remaining juice over low heat until soft, then add garlic for an additional 2 minutes.
- Combine the rest of the ingredients including the meat. Note: I do not use the full container of V8 juice.
- Simmer for 2 hours
- Serve with your favorite toppings!

This Italian wine is affordable & delicious! According to the wine maker, “Bright red in color, aromas of violets and red berries complement undertones of leather and anise. On the palate, this wine is dry and mellow with smooth tannins that make for a crowd-pleasing, easy-to-drink red wine.” The smokiness complements the steak chili and perfectly and perfectly balances all the acidity from the tomatoes!
