I am a sucker for soup all year long, and one of my favorite go-to soups is chicken tortilla soup! Last night, I made a little tweak to my usual recipe while making the soup for my fiancé and our friend and they RAVED about it! Our friend asked for the recipe, so I thought this deserved a permanent spot on the blog! This soup is perfect for all fall and winter and I love that there is barely any mess with it being all made in one pot.
P.S. – the tweak I made last night was I used William’s Chicken Chili Seasoning – this a local KC company so if you are not able to get your hands on it then any white chicken chili packet should work! It really brought the soup to the next level!
Prep Time: 10 min
Cook Time: 1.5 hours
Total Time: 1 hour and 40 minutes
Ingredients:
• 4 cans (14.5 oz each) chicken broth
• 1 can (15 oz) diced tomatoes with green chilis
• 2 garlic cloves, minced
• 1 tablespoon chili powder
• 1 packet of Williams White Chicken Chili seasoning
• 1 teaspoon salt
• 1 teaspoon pepper
• 1 can (15 oz) black beans drained and rinsed
• 1 can (15 oz) corn
• 1 yellow onion, chopped
• 1 bell pepper, chopped
• 1 ½ lbs boneless, skinless chicken breasts, shredded
Optional Toppings:
• Sour Cream
• Shredded Cheese
• Onions
• Chives
• Tortilla strips
• Avocado
• Cilantro
• Lime
Steps:
- Combine all ingredients into a dutch oven or soup pot, then bring to a boil. Optional: To cook quicker, sauté onions and bell peppers until soft before adding other ingredients.
- Add raw chicken breasts, then reduce to a simmer for 15 minutes (or until chicken reaches an internal temperature of 165º F).
- Remove chicken and shred, then add back into the pot.
- Simmer on low for an hour (or as long as you can wait to get all the ingredients marinating) then serve!
Wine Pairing:
Nautilus Sauvignon Blanc, 2021, Marlborough
Typically, Sauvignon Blanc is paired with sea food, white meat, and vegetables. Although it is non-traditional, this veggie & chicken soup makes a surprisingly yummy pairing with an acidic, dry, topical fruit wine – like this Sauvignon Blanc! It also balances out a little bit of spice nicely.

Grapefruit, citrus, lime, passion fruit, green apple, minerals, pepper.
